The differences in thickness between 7-, 8- & 9-speed sprockets that don't have built-in spacers are so small that substituting 2 or 3 in a cassette won't have any affect on the indexing. If you don't find the Shimano cogs you want here, check the QBP pages for Miche Shimano compatible cogs: These cogs, made by Miche in Italy, are very high quality and work exactly the same as Shimano's cogs. They are available in more sizes than Shimano's. They are also available for Campagnolo cassettes.

Shimano HG400 11-36t 9-speed Cassette

We've run it successfully with a basic Deore (non-shadow design) with a longer (20mm) B-tension screw all the way in. You might have to reverse it for more adjustment. If this cassette is being used on a 29er Mountain bike, it must be used in conjunction with the Shimano M629/M529 29er hubs. Designed for 29ers but is also a new option for touring bikes!
